Banana Kulfi

Ingredients

Milk - 200 ml
Banana - 1 (small)
Sugar - 25 gm
Cardamom - 2

Take milk in a pan, keep heating till amount reduces to half the original. Keep stirring. Add two cardamoms and remove from fire. Add sugar. Keep it for cooling. Meanwhile take the banana and blenderise it properly so that no lumps are formed. Once the milk has cooled enough. Add the banana paste to it. Stir so that the paste properly mixes. Put it in molds and freeze.

 Pista Kheer

Ingredients

Milk - 200 ml
Peas - 50 g
Sugar - 20 - 25 g
Pista essence - Few drops
Pista - 5 gms

Boil peas and grind them into a fine paste. Take milk in a pan. Keep heating till amount reduces to half the original amount. Keep stirring continuously. Add sugar and the pea paste. Bring to boil 2 - 3 times. Remove from fire and freeze it. Garnish with Pista and serve.

 Spinach Rice

Ingredients

Rice - 100 gm cooked
Spinach - 1/2 bunch - blanched and ground to paste
Butter - 1 Tsp
Ginger Paste - 1/2 Tsp
Garlic Paste - 1/2 Tsp
Chili Powder- 1/2 Tsp
Clove, Cinnamon, Cardamom, Black Pepper corn

Melt butter in a pan on medium heat. Season Cloves, Cardamom, black pepper etc. Add both pastes and chili powder and stir well. Add spinach paste and salt to taste and fry well. Add the rice, mix and cook till gravy is absorbed. Serve hot.

Stuffed Tomatoes

Ingredients

Tomatoes -100 gms
Sprouts -    50 gms
Onions -     30 gms
Paneer -     10 gms

 

 Take round and stiff tomatoes. Scoop out the contents of the tomatoes. Take sprouts, steam them and add chopped onions to it. Fill the tomatoes with sprouts. Grate Paneer and to the filling. Put the contents scooped out in a pan. Add salt according to taste, red chillies, garam masala and dhania to it. Place the tomatoes in the gravy and cover the pan. Cook till the tomatoes are soft. Serve hot.

 Cucumber Boats

Ingredients

Cucumber - 100 gms
Sprouts - 30 gms
Curd - 20 gms
Tomatoes -10 gms
Onions -10 gms

Take a long even cucumber. Wash it. Peel it and cut it longitudinally into two halves. Scoop out the seed part. Take sprouts (or steam them). Add chopped tomatoes and onions to it. Put red chili powder, salt and lemon juice to the sprouts. Add curd as a dressing. Fill the grooves in the two cucumber slices with the sprouts and curd filling.

Vegetable Tarts

Ingredients

For Tarts

Maida - 50 gms
Oil - 10 gms

For white sauce

Maida - 20 gms
Milk -25 gms
Peas - 50 gms
Cauliflower - 50 gms
Black pepper, salt to taste.

Make stiff dough using maida and oil. Once done roll it into small sized chapatis (similar to mathris). Take a bowl and place the rolled dough such that it forms a groove. Put it for baking.

Meanwhile take 20 gm maida, put in a pan and start roasting. Add milk. Take care that no lumps do form. Add boiled peas and cauliflower to it. Add black pepper and salt to taste.

Once all the tarts are out of the oven. Put the fillings in it and serve hot.
